Smothered Chicken w/Mushrooms and Spinach -- perfect dinner...low carbs! A little time-consuming, but delicious! I would even be happy to make the spinach & mushrooms & eat them together without the chicken! I will make this again. 3-22-14
Pico de Gallo Ingredients 4 medium tomatoes, diced 1 small onion, diced 1/4 cup cilantro, chopped 2 jalapenos, diced (remove seeds for less heat) 1 lime, juiced Salt and fresh pepper to taste Instructions Combine all the ingredients, season with salt and pepper to taste. Place in fridge until ready to serve.
Roasted carrots: Roast in the oven at 400 degrees for about 20 minutes with some seasoning and a little olive oil. Then drizzle with about 2 tablespoons of olive oil, 3 tablespoons of honey, and about 1 teaspoon of balsamic vinegar. Pop them back into the oven for about 5 more minutes to achieve sweet, salty, still slightly cruchy perfection!
Made this as a 4th of July side dish and it was one of the biggest hits of the night!!! Everyone loved it and ate it with their lunches and dinners for the next two days! Cowboy Caviar - looks like a good summer salad YUM!
