Veggie Enchiladas – Annie’s Eats I made these last night and they are so good. My notes: 1-I couldn't get any queso fresco, so I just used a Mexican blend cheese for the whole dish. 2-I am not a huge bean fan so I mashed all of them rather than just half. 3-I used a green pepper because that's what I had. I may use both in the future though. 4- Added additional water to the sauce because it was too rich and wasn't going to be enough for the dish. I will double the sauce for future batches.
