5 medium zucchini, halved lengthwise 3 tbsp Butter 1 medium onion, chopped 1 small red bell pepper 3 cloves garlic, finely chopped 1/2 tsp dried oregano leaves 1/4 cup grated Parmesan cheese  Directions Preheat oven to 375 Scoop out zucchini pulp, put zucchini on baking sheet, coarsely chop remaining zucchini and pulp, saute with onion 5min add peppers and spices 1min more, spoon mixture into halves, top with cheese, bake 30mins.

This is a recipe we tried last week and it was delicious and easy! Even better with pita bread.
