Chocolate Chip Muffins. Altered this recipe to make them Gluten-Free. Used 1 whole box of Betty Crocker's Gluten-Free All-Purpose Rice Flour Blends, 3 eggs, 2 tsps. vanilla, 2 tbs. baking powder, 1 3/4 cup of 1% milk, 5 tbs. Land O' Lakes Light Butter with Canola Oil in a tub, 1/2 bag of mini chocolate chips, and 3/4 cups sugar. I did not add xanthium gum like you're supposed to do with gluten-free recipes, but they came out light, fluffy, and moist and not crumbly at all!
Chocolate Pumpkin Muffins. I have made these several times!! They are sooo delicious and it only takes 5 mins to prepare (& they are completely healthy--its a weight watchers recipe). All you need is 15oz can of pumpkin, chocolate cake mix, and 1/4cup water...mix together and cook for 20mins. so easy & so good! <3 (: the best part is you can't taste the pumpkin it tastes just like chocolate (:
