    Buffalo Scallops- Directions Preheat oven to 350 degrees. To a large bowl, mix olive oil with Cajun seasonings, red pepper, and bread crumbs. Add scallops and coat with seasoned bread crumb mixture. Transfer scallops to a baking sheet and top with dollops of Buffalo sauce. Bake about 12 minutes, or until scallops are cooked through. Toss with remainder of the Buffalo sauce and serve........Use Almond flour instead of break crumbs!

Grilled Scallops Heat grill to high. Soak five 10-inch bamboo skewers in water for 10 minutes. Season 2 pounds of large sea scallops with salt and pepper and thread on skewers. Grease grill grates, brush the scallops with Maya Kaimal's Mango Chili Glaze, and cook until grill marks form, 3 to 4 minutes per side. Remove from heat, brush again with glaze, and serve.
