Caramelized Scallops with Strawberry Salsa. ~ This salsa is a delicate balancing act between sweet and sour. If your strawberries are especially sweet, you might need a touch more red wine vinegar. If they aren’t especially sweet, you could try swapping red wine vinegar for balsamic vinegar to get something that tastes good to you. As always, experiment until you find the proportions you like.
Grilled Scallops Heat grill to high. Soak five 10-inch bamboo skewers in water for 10 minutes. Season 2 pounds of large sea scallops with salt and pepper and thread on skewers. Grease grill grates, brush the scallops with Maya Kaimal's Mango Chili Glaze, and cook until grill marks form, 3 to 4 minutes per side. Remove from heat, brush again with glaze, and serve.
