    Grilled Chicken & Pineapple Quesadillas (serves 4) Ingredients: 8 whole Flour Tortillas, 2 Tablespoon Margarine, 1 cups Grilled Pineapple Cubes, 1.5 Pounds Skinless Chicken Breasts, Salt And Pepper, 3 cups Cheddar and Monterrey Jack Cheese, 3 Tablespoons Barbecue Sauce. Instructions: Cook Chicken and cut into small strips, Cook Pineapple, Place each tortillas into a heated pan, add cheese, Pineapple, Chicken; BBQ Sauce , Place tortilla on top then place it back in the pan to melt the cheese.

    Pineapple chicken quesadillas 4 flour tortillas 1 chicken breast barbecue sauce crushed pineapple bacon bit (optional) cheese (I prefer colby-jack) cooking spray Change Measurements: US | Metric Directions: Prep Time: 2 mins Total Time: 7 mins 1 Start to heat up a skillet on the stove because this won't take long. 2 Take flour tortilla and sprinkle half of it with cheese and 1/4 of cooked chicken. 3 Add bacon bits and a little bit of crushed pineapple (no juice) if desired. Pour a little bit of BBQ sauce on top. Don't be too generous with the sauce or it will seep out of the quesadilla. 4 Spray the pan with cooking spray. Fold the tortilla in half and place in pan. It only takes a few short minutes to brown one side and then flip over to brown the other side. 5 When done, cut into wedges and serve with added BBQ sauce if you like to dip. Read more:
