chicken and rice casserole. Yummy! (I didn't use canned cream of chicken, I used the recipe it calls for which was great!) For the seasoning of choice I used ranch dressing mix. I kept the foil on the entire time instead of taking it off halfway through. We all really liked this one. :)
Normal Recipe: salsa chicken casserole 1 cup uncooked rice 1 cup frozen corn kernels (thawed) 1 (15 oz.) can black beans 1 (16 oz.) jar salsa 1 cup chicken broth ½ Tbsp chili powder ½ tsp oregano 2 large (1.5 lbs.) chicken breasts 1 cup shredded cheddar cheese 2 whole green onions, sliced
This was very good, I doubled everything but the chicken and beans. I used kidney beans instead of black beans, and a can of yellow corn. I had to use 2 13 x 9 pans for everything to fit. I used all medium heat ingredients, it was VERY mild, next time I'll use hot. I also felt it was a little bland, I would add some black pepper, garlic, onion powder, spice it up some. Michael LOVED it as is.
