Hummus Melts: Toast 4 English muffins. Saute little baby spinach in some olive oil and garlic. Turn on your broiler. On a cookie sheet, lay out each English muffin and top with hummus of your choice. Then top with spinach and Mozzarella. Broil until brown and bubbly. Heaven.
