sweet baby rays! crock pot chicken! 4-6 pieces boneless skinless chicken breasts (i threw them in frozen... even easier!) 1 bottle BBQ sauce (sweet baby ray's all the way!) 1/4 c vinegar 1 tsp. red pepper flakes 1/4 c brown sugar 1/2 - 1 tsp. garlic powder mix BBQ sauce with all ingredients listed under it. place chicken in crockpot. pour sauce over it and cook on LOW for 4-6 hours. you pretty much don't even have to stir it... how easy is that!?

tomato basil parmesan soup - done in a slow cooker I didn't have Basil or Bay leaves, I just used Italian Seasoning. This wasw AWESOME!! With the parmesan cheese in ti, the leftoers were thick the next day, so we boiled up some pasta and poured the thickened soup over it. It tasted pretty cose to the Lipton Creamy Tomato Pasta Side, with parmesan.

Cheeseburger Soup ~ ("This should just be considered a version of potato soup, but it was VERY tasty. Using sausage instead of ground beef (and double the meat), this will be my go to potato soup recipe from now on." ~ SC)
Cheeseburger soup recipe Ingredients 1/2 pound ground beef 3/4 cup chopped onion 3/4 cup shredded carrots 3/4 cup diced celery 1 teaspoon dried basil 1 teaspoon dried parsley flakes 4 tablespoons butter, divided 3 cups chicken broth 4 cups diced peeled potatoes (1-3/4 pounds) 1/4 cup all-purpose flour 2 cups (8 ounces) process cheese (Velveeta) 1-1/2 cups milk 3/4 teaspoon salt 1/4 to 1/2 teaspoon pepper 1/4 cup sour cream Directions In a 3-qt. saucepan, brown beef; drain and set aside. In the same saucepan, saute the onion, carrots, celery, basil and parsley in 1 tablespoon butter until vegetables are tender, about 10 minutes. Add the broth, potatoes and beef; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir for 3-5 minutes or until bubbly. Add to soup; bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Stir in the cheese, milk, salt and pepper; cook and stir until cheese melts. Remove from the heat; blend in sour cream. Yield: 8 servings (2-1/4 quarts). Baked Chicken Parmesan Casserole: 2 T. olive oil,2 cloves garlic, crushed, red pepper flakes to taste, 6 boneless skinless chicken breasts, 2 C. marinara sauce,1/4 C. chopped basil, 8oz mozzarella, shredded, 4oz Parmesan, grated, 5oz pkg garlic croutons. In baking dish, add olive oil, garlic, red pepper, lay in breasts, 2 cups tomato sauce, sprinkle basil, add half mozzarella & half Parmesan cheeses, then 5oz garlic croutons, then remaining cheeses. Bake 350, 35 minutes.

Frozen Corn ½ cups Onion, Chopped ½ cups Red Pepper, Diced 1 can (10 Oz) Enchilada Sauce 1 can (10 3/4 Oz) Can Condensed Cream Of Chicken Soup 1-½ cup Milk 2 whole Chicken Breasts 1 cup Pepper Jack Cheese, Shredded In a 3 1/2 to 5-quart slow cooker, combine drained beans, tomatoes, corn, onion, and bell pepper. Place 2 chicken breasts on top of the mixture. In a large bowl, whisk together the enchilada sauce and soup. Gradually whisk in milk until smooth. Pour sauce mixture over ingredients in cooker. Cover; cook on low heat for 6 to 8 hours or on high for 3 to 4 hours. Remove chicken and cut or shred into bite-sized pieces. Add chicken back into the soup. Top with pepper jack cheese and serve. The soup can also be topped with avocado, sour cream, or crushed tortilla chips. Note: if the soup is too thick for you, just add a little more milk after it’s all cooked.

Crock Pot Chicken Enchilada Soup 1 15-ounce can black beans, rinsed and drained 1 14.5-ounce can diced tomatoes (I used the kind with sweet onion in it) 1 10-ounce package frozen whole kernel corn 1/2 cup chopped onion 1/2 cup chopped yellow, green, or red bell pepper (I used red, which is my favorite pepper) 1 10-ounce can enchilada sauce (I used mild) 1 10.75-ounce can condensed cream of chicken soup 1 1/2 cups milk (I used skim) 1 cup shredded Pepper jack cheese (4 ounces) 2 chicken breasts In a 3 1/2 to 5 quart slow cooker, combine drained beans, tomatoes, corn, onion, and bell pepper. Place 2 chicken breasts on top of mixture. In a large bowl, whisk together enchilada sauce and soup. Gradually whisk in milk until smooth. Pour sauce mixture over ingredients in cooker.Cover; cook on low heat for 6 to 8 hours or on high for 3 to 4 hours. Remove chicken and cut or shred into bite sized pieces. Add chicken back into soup. Top with pepper jack cheese and serve. Can also be topped with avocado, sour cream, or crushed tortilla chips. Crock Pot Chicken Tortilla Soup 1 can black beans, drained 1 can corn, drained 1 can diced tomatoes (14.5 oz size – southwest style, if possible I used petite diced tomatoes w/ sweet onion) 1 packet enchilada sauce mix (or if you can’t find this, mild taco seasoning works well too, this is what I used) 1 1/2 C water 1 can (8 oz)tomato sauce 1 can ( 10 3/4 oz) cream of chicken soup 2 C milk 3-4 boneless chicken breasts (I only used 2 chicken breasts) In crock pot, mix the enchilada packet together with the water and tomato sauce. Add cream of chicken soup and milk and whisk together until smooth. Add chicken. Pour drained black beans, drained corn and diced tomatoes on top of that.Cook on low 6-8 hours.Before serving, take out chicken and shred or dice, then put back and stir it all together. Serve with sour cream, shredded cheddar cheese, lime, avocado, or tortilla chips. (We just did cheese and sour cream, we forgot about chips)
Chicken Enchilada Soup Recipe: Ingredients 2 lbs boneless skinless chicken breasts, chopped 1 large onion, diced 2 cloves garlic, diced fine 1 – 15 oz can black beans, drained and rinsed 1 – 11 oz can Mexi-corn, drained and rinsed (corn with added bell peppers) 1 – 10 oz can enchilada sauce 1 – 15 oz can diced tomatoes, or diced tomatoes and green chilis 4 cups chicken stock 4 tablespoons harina (fine pre-cooked cornmeal, I use P.A.N. Brand) or masa harina 2 teaspoons cumin 1 teaspoon coriander 2 cups shredded cheddar cheese 1/4 cup freshly chopped cilantro salt and pepper olive oil Method 1. Preheat a large soup pot. Drizzle with olive oil. Salt and pepper chicken. Add to soup pot. Add chopped onion. Cook until chicken is done. Add garlic and saute for 2 – 3 minutes. Add beans, corn, canned tomatoes, enchilada sauce and chicken stock. Add cumin and coriander. Bring to a boil and reduce to medium or medium-low heat. Add masa harina, by the tablespoon, sprinkling it evenly over the top of the soup. After adding each tablespoon, mix into the soup well to prevent clumping. 2. Cook soup for 20 – 30 minutes. After soup is done, add cheddar cheese and freshly chopped cilantro. Mix until cheese is melted and turn heat off. Serve. (This soup can be cooked quickly, or made in the crockpot. When I made it yesterday, I started everything on the stove, brought it to a boil, and then transferred it to the crockpot. After 2 – 3 hours on high, it was ready to go. You can also cook on low for 4 – 5 hours. Just be sure not to add the cheese and fresh cilantro until ready to serve, then turn your crockpot to keep warm or off.)

JellO-Shots or use plain jello for a fun summer snack....... Cut an Orange (or lemon or lime) in HALF and gut it. Mix the jello shot (1 cup hot water, box jello, 1 cup various liquors), stir till disolved, then add the jello mix to the half shell and refrig for 3 hours or more. Once solid, slice and serve! Am sure jelly will work just as well!

Get it all the way to the white-ish part) Set hollowed orange halves, open side up, in something secure so they don't move around when the jello is in them (I used muffin pans; easy transportation, great to keep them where you want 'em =D) Prepare jello with 1/3 less water needed for recipe. Pour into orange halves Set in fridge and chill completely Take out of fridge, flip over onto cutting board (open side down so it's flat on the surface). Cut into slices, either halves again (1/4 of the whole) or into 3 slices. Make sure to use a really good serrated knife, and don't be really forceful with them, it's jello after all! =) And voila! You have jello orange slices! Option: I haven't done this personally, but I plan on trying this at some point.... Jello SHOT Slices! =D Oh yea, what a party that would be! But I don't recommend having both at a gathering where there will be kids... imagine the mix ups that could happen
