Mexican Grilled Corn- I used this recipe as a base for a corn salad. I boiled 11 corn on the cob for about 6 mins. then cut it off the cob. I added about 3/4 tsp of chili powder and about 1/4 tsp of paprika. I added 6 T. of mayonnaise, the juice of half a lime, some salt, pepper, cilantro, and cotija cheese. It was really, really good and if I'd used frozen corn, it would have been really quick too.
