PRESERVE BASIL 1 YEAR IN FRIDGE: Clean fresh basil in cold water, air dry. In mason jar, sprinkle a little Kosher salt in bottom. Add a little basil. Add a little olive oil. Repeat until container is full or out of basil. Press down to cover basil with oil & salt. Put on lid & label with the date. Keeps in fridge for 1 yr. Olive oil will solidify. To use, scoop out amount needed, bring to room temp. Rinse leaves in warm water for less oil. Basil turns dark. Add olive oil to keep leaves covered.
