Crash Hot Potatoes. LOVED THEM and great for any meal!! Preheat Oven to 450*. Boil baby potatoes until fork tender. Set potatoes on baking sheet & using a potato masher, gently smash each potato down so they look like thick cookies. Drizzle with olive oil and season. Top with some lovely grated Parmesan cheese. Bake for 20 minutes.
Tomato-Potato-Zucchini-Summer Squash Casserole. STS: This is a keeper! I replaced the onion with sweet potato and sprinkled a little Parmesan cheese on top. A mandolin makes this easy. I finely chopped the leftovers and added them to commercial spaghetti sauce for our spaghetti dinner on the next night.
