Oatmeal Chocolate Chip Pancakes- these are really good! You only need 2-3 to fill you up. I didn't want to bother with the food processor just for less than a cup, it makes it more of a oatmeal flap jack. It makes 8, 1/4th cup pancakes. They are thick, add a little more buttermilk for thinner ones. It makes the house smell amazing!
The most awesome breakfast cookie ever - and no flour, no sugar, no dairy. 1.5 cups of oats, 2-3 super ripened bananas ,1 cup of unsweetened applesauce, a handful of craisins, and a sprinkle of cinnamon. Just throw everything together, mix it up pretty well, throw it on a baking sheet at 350 for about 35 minutes and then go to town!
