    I made this recently. Stacked 3 zucchini, 2 yellow squash, one tomato, one yellow onion sliced and then halved (like half moons) and one potato in a square dish. Drizzled evoo, sprinkled salt, pepper and Morton & Bassett italian seasoning over the top. Baked a little longer testing with a fork then covered with cheese and continued baking, sooo yummy.

    Tomato, Sweet Potato, Zucchini, Summer Squash Casserole: slice all veggies approx same size alternate slices in baking dish drizzle with olive oil minced garlic & onion, s, thyme, bake at 425 for 20 min, top with Parmesan then bake another 15 min
