Single-Serving Pumpkin Baked Oatmeal - AHHHH!  This is SOOOO GOOD!!!  I made it in the microwave so took less than 5 min to throw together.  I also made mine with a 1/2 tsp of spelnda/brown sugar blend and one 1 tbsp of chopped walnuts.  Everything else was perfect.  SOOOOO good!  Not surprised though, I love almost all Chocolate Covered Katie recipes.
