Mediterranean Minted Turkey Salad from pg 125 in my newest book S.A.S.S! Yourself Slim (for vegans & vegetarians swap the turkey for lentils or beans; every meal in the book can be made vegan & gluten free). P.S. Black olive tapenade is the dressing! :)

Made this for my students when we studied Greece. I didn't use the dressing though. I used olive oil, lemon juice, and salt for a simple dressing. Got a mixed response. Some really liked, some thought it was okay, others did not like. I was proud that they were willing to try something new.

Love this picture, love this salad! You may like our boards!

Portillo’s Chopped Salad. This is very close to the real thing! I added two grilled chicken breasts like it has at Portillo's and did half balsamic and half seasoned rice vinegar so the salad dressing tasted more like the real thing.

Perfect your salad. Pair the veggies you love with the best dressing
