"I am obsessed with the Quinoa pancakes! I use coconut oil instead of butter, and I use half whole wheat flour and half regular. I have made them with eggs but I have also made them with ground flaxseed/water mixture. And both work well!! They are hearty and super filling!! Everyone loves them!"
1 cup [vanilla] almond milk – or any type milk you prefer 1 cup water 1/4 teaspoon salt 3/4 cup original quinoa 1/4 cup red quinoa – or total of 1 cup original 2 cups fresh blackberries – or blueberries, raspberries, etc. 1 teaspoon ground cinnamon 1/3 cup chopped walnuts, toasted 3 teaspoons agave nectar – if avoiding sugar, you can substitute for stevia 2-3 tablespoons shredded coconut
