Avocado Pops -- 6 pops 1 ripe avocado 1 c granulated sugar 1 c coconut milk 1 tsp vanilla extract 1. Combine all the ingredients in a blender or food processor until smooth. 2. Pour the mixture into 6 three-ounce paper cups. Cover the top of each cup with a small piece of foil. Freeze for one hour. 3. insert sticks. Freeze for 4 hours, or until firm. Serve immediately.
