Sweet potato, spinach & lentil dahl. Added about 2 tsp each of chopped garlic, ginger root, and cumin. Used half a block of thawed, frozen spinach instead of fresh. Great with warm nan bread. Serves four (not 2 as per recipe). For us (just two) it made one great meal and super-easy leftovers the next day!
BBC Good Food- Quinoa, feta and veg salad. I love cooking with quinoa at the moment and experimenting with different side dishes at dinner. This recipe can be adjusted in many different ways to include any veg you like. I usually cook the quinoa in chicken or veg stock. This can be served hot or cold, both taste delicious! (PS) A courgette is a zucchini, for you non-Brits out there. :)
