Cheesy Quinoa Cakes--> UNHHH SO GOOD! I used white quinoa, and a mix of gruyere and parm instead of fontina, and I also added a cup of peas, cause peas are awesome. Also I didn't have scallions. These were delicious and crispy; they have a wonderful texture! I would recommend spicing them well, as quinoa doesn't have a strong flavor of its own--maybe some garlic and basil? Overall delicious! Also I didn't make the aioli, but it sounds good! I dipped mine in some sweet red chili sauce.
