You can use less egg yolks and more egg white if you prefer.) 1-2 tsp. Spike

Egg muffins = zero carbs + lots of protein. Healthy breakfast for on the go! 15 eggs (for silicone muffin pans, use 12 eggs for metal muffin tins or individual silicone cups. You can use less egg yolks and more egg white if you prefer.) 1-2 tsp. Spike Seasoning (optional, if you have food allergies or don't have Spike, use any type of seasoning blend that's good with eggs.) 1-2 cups grated low fat cheese (I like sharp cheddar or a blend of cheddar/Jack cheese, use less cheese if using meat) Optional, but highly recommended, 3 green onions diced small. Optional: chopped veggies such as blanched broccoli, red pepper, zucchini, mushrooms, etc. (Using veggies will reduce the fat content) Optional: diced Canadian bacon, lean ham, or crumbled cooked turkey sausage Preheat oven to 375 F. Use regular or silicone muffin pan, 12 muffin size. If using silicone pan, spray with nonstick spray. If using regular muffin pan, put two paper liners into each slot, then spray liner with nonstick spray. In the bottom of the muffin cups layer diced meat, if using, vegetables, if using, cheese and green onions. You want the muffin cups to be about 2/3 full, with just enough room to pour a little egg around the other ingredients. Break eggs into large measuring bowl with pour spout, add Spike, and beat well. (I used to add a bit of half and half or milk, but lately I like the way they turn out without it.) Pour egg into each muffin cup until it is 3/4 full. I like to stir slightly with a fork. Bake 25-35 minutes until muffins have risen and are slightly browned and set. Muffins will keep more than a week in the refrigerator. Egg muffins can be frozen and reheated, but I like them best when they are just refrigerated. For best results, thaw in refrigerator before reheating. Microwave on high about 2 minutes to reheat.

These yummy Cheesy Cauliflower Tots are low carb and gluten free and a great way to get the kids to enjoy their veggies. They are perfect as a snack or a side dish and will be a favourite with all the family.
Did you ever find a recipe that sounds really tasty but has an ingredient and recipe instructions that just doesn't appeal to you? That's what I saw with this recipe, but I didn't let it stop me because I just loved everything else about the recipe! This recipe called for 4 egg whites...and the whipping of egg whites into stiff peaks! I do not like either of those things because I don't want to waste the egg yolks and I'm not that experienced at the stiff peaks egg white whipping thing! It also called for the use of a pasrty bag and star pastry bag tip...I don't own either of those! Plus that's just too much work for making tater tots! So I used 1 large egg (including the yolk) and just beat it into the cauliflower mixture! Guess what? It worked perfectly! And I used a 10 oz. box of frozen cauliflower florets instead of fresh, to make it even easier! Just thaw and squeeze the heck out of the cauliflower to drain all the excess liquid! Instead of the pastry bag I just plopped it onto a parchment lined cookie sheet using two spoons. Again, it worked perfectly! These cauliflower tater tots were delicious! Especially if you're a fan of cauliflower like I am! They have a nice strong cauliflower flavor but are light,fluffy and cheesy! This is a low carb recipe! Here is the link to the original recipe...'Cheesy Cauliflower Tater Tots'...and below is my photo of how mine turned out! And I included my easy version of this recipe! Cheesy Cauliflower Tater Tots INGREDIENTS; 1 Medium head of cauliflower - I used 10 oz. frozen thawed and squeezed dry 2 Tbls. heavy cream - I used light cream 2 Tbls. butter 1/3 cup shredded cheddar cheese 4 egg whites - I used 1 large egg with yolk salt and pepper to taste - I used 1/4 tsp. of each garlic powder to sprinkle ontop after baked - my idea MY EASY DIRECTIONS; In a microwave safe bowl add cauliflower, light cream and butter. Microwave on high for 5 minutes. Transfer cauliflower mixture to a food processor with cheese and pulse slightly until it's the texture of oatmeal. Add salt and pepper. Place back into bowl. Then add in egg and beat until fully combined. Line a cookie sheet with parchment paper and preheat oven to 375 degrees. Drop cauliflower mixture by the spoonful onto parchment paper...you should get about 14 tater tots. Bake on center rack, uncovered, for about 18 minutes or until nicely browned. Remove from oven and sprinkle with garlic powder. Serve warm or room temp.

These are a delicious home-made bread replacement that are practically carb free and very high in protein. They are just like heaven so I call them clouds Carb Free Cloud Bread Ingredients: 3 eggs, separated 3 tablespoons whole milk cottage cheese or 3 tablespoons cream cheese 1/4 teaspoon cream of tartar 1 (1 g) packet artificial sweetener Instructions: Preheat oven to 300 degrees. Separate the eggs very carefully, there must be no yolk in the white. In one bowl, mix together the egg yolks, the 3 T. of Cottage Cheese OR Cream Cheese and the one packet of Sweetener until smooth. In the other bowl add 1/4 teaspoon of Cream of Tartar to the whites and beat the whites on high speed until they are fluffy and form nice peaks. Very carefully fold the egg yolk mixture into the egg whites until mixed, but try and not break down the fluffiness of the egg whites too much. Spray two cookie sheets with Pam or other fat-free cooking spray. With a large spoon, "scoop" the mixture into 10 even rounds on the sheets (about the size of the top-half of the McDonalds hamburger bun; roughly 3/4 inch thick and 4 to 5 inches across). Bake on the middle rack. Here is when you have to watch them, because the cooking time the same on any two batches. It is somewhere around 1/2 hour, but it could be less or more. You just need to watch them until them become nice and golden brown (again, the color of a McDonalds bun). Remove from the pans and cool on a rack or cutting board. While warm they are crumbly and similar to cooked meringue - but don't let this fool you! Once completely cool, seal them in a ziplock storage baggie or a tupperware over night. They will totally change their consistency, to something much more like bread - a softer texture that is nice and chewy. If you do not like softer chewy bread, then eat them as they are, nice and crisp. Since the sides that were facing the pan are perfectly flat, you use these to spread things on, or make sandwiches, or even as a burger bun! I honestly have no idea if other people are as into making serious breakfasts on the weekends like I am. If it's a Saturday or Sunday in our home you can bet eggs, bacon, and any combination of onions, peppers, pancakes, potatoes, potato pancakes or waffles will be flying around. With as often as we make breakfast feasts, I'm always looking for fun ways to break out of our usual patterns. I ran across this recipe and decided to try my own variation. Holy breakfast! This is crispy, crunchy, gooey, flavor-packed and just downright fun. It's all of the delicious parts of breakfast foods rolled... (or boated?) into one. I would be lying if I said that this experiment went totally according to plan. I had trouble finding a crusty loaf of bread that would work for this, and the second I poured the egg mixture into the bread, the egg immediately started leaking through the bread in a few different spots. So, bonus! In addition to the recipe you will get a troubleshoot of what happens if this fails for you too! All will not be lost. 1 baguette-style loaf of bread, 10-12 inches long 5 eggs 5 strips of bacon, cooked and chopped 4 oz. medium cheddar cheese grated (I used marbled) 1/3 cup milk 2 green onions, thinly sliced salt and pepper Preheat oven to 350 degrees. Hollow out loaf of bread using a bread knife and set on a baking tray. It's best to cut a V shape first then go from there. Try to leave 3/4 in of bread at the bottom and on the sides. Whisk milk and eggs together and stir in remaining ingredients, reserving a bit of cheese for the top. Add desired amount of salt and pepper. Pour mixture into bread boat,* top with remaining cheese and bake for 30-35 minutes until egg mixture is fully cooked. *If the bread starts leaking, it's ok!! Unless you have a gaping hole, the eggs will create a sort of suction between the bread and the pan and won't all leak out. Once the egg in the bottom has started to set in the oven, about 10 minutes, whip up a few more eggs (2-3 depending on how much leaked out and will need to be replaced) with salt and pepper and quickly scramble them in a pan until 3/4 of the way cooked. Remove sheet pan with loaf, scrape off the egg that leaked (or it will burn) and add scrambled eggs into boat and mix with existing fillings. Once it's out of the oven, let rest for five minutes and cut into slices. All you need is a slice or two to get a full, hearty breakfast that's something fun and out of the ordinary. Yum! Bonus: this reheats very well in a toaster oven. Happy weekend!

Hash brown Egg Nests 1 box (5.2 oz) Betty Crocker® Seasoned Skillets® hash brown potatoes with hot water, salt and margarine called for on potato box 1/4 cup crumbled bacon or ham 6 eggs 1 teaspoon salt 1/2 teaspoon pepper Heat oven to 400 degrees. Spray 6 regular-size muffin cups with cooking spray. Make potatoes as directed on box. When done, place in medium bowl. Stir in crumbled bacon. Divide mixture evenly among muffin cups. Bake about 15 minutes or until starting to turn golden brown on edges. Reduce oven temperature to 350°F. Crack 1 egg over each muffin cup. Sprinkle with salt and pepper. Bake at 350°F about 18-20 minutes or until egg whites and yolks are firm, not runny.
