Spicy Thai Basil Chicken Super good! Doubled the sauce, added chopped water chestnuts, used garlic chili sauce instead of chilies. Also didn't use basil because I didn't have any and it was still great. Can't wait to make it again. Also used the meat in an Asian salad. It was great also.
Chicken & Avocado Enchiladas - these are soooo yummy! for the filling, I cut up raw chicken breasts and sauted them with 1/2 yellow onion, a can of green chiles with some cumin, garlic powder, pepper and chili pepper. For the sauce I used to Greek yogurt instead of sour cream. I was asked for the recipe multiple times.
