      Zucchini Pizza Apps Low carb!...YES!! talk about yummy! SIMPLE EASY SIDE DISH... Slice the zucchini in half. Slice off the bottom to keep in stable. Brush with olive oil and top with garlic or garlic powder. Top with sliced tomatoes, salt and pepper to taste. Use mozzarella cheese, Parmesan cheese or mixed blend.. Bake 375 for 20 to 30 minutes until soft.

      Low carb Zucchini Pizza. It needs 10-15 more minutes of oven time than the recipe provides for. Don't use too much olive oil, or it gets soggy. Really good side dish.

      Zucchini Boats...many of my loves!! Zucchini, tomatoes, garlic, basil, olive oil, and mozzarella cheese! Yum!

      Found the actual LINK to this (also a bunch of other yummy-sounding zucchini recipes). Zucchini Boats: Cut a zucchini in half lengthwise and trim a bit off bottom so it sits in baking dish. Scoop seeds with spoon. Brush with mixture of crushed garlic, olive oil, salt & pepper. Arrange sliced tomatoes into grooves, sprinkle with bread crumbs and bake @ 350 degree about 30 minutes. Place shredded fontina/mozzarella on top, then broil till bubbly. Drizzle w/olive oil and shredded parm.
