Mash potatoes plain with butter or you can add yummy ingredients like cooked bacon, cheese, parsley, green onion etc. Stuff in to a greased muffin tin, run a fork along the top and brush with melted butter or olive oil. Bake at 375 degrees or until tops are crispy and golden. These are always a family fave in my house... super easy and delish!
Roasted Red Potatoes. Quarter the potatoes long-wise. Toss in olive oil, salt, pepper, and rosemary. Arrange potatoes in muffin tin as shown. Add garlic clove in the middle of the potato quarters. Add half a teaspoon of olive oil on top of each garlic clove. Bake 375 for 25 minutes! Enjoy. by mvaleria
Quick Dinner Mix 1/2 cup of Bisquick, 1/2 Cup of Milk, and 2 eggs together for a base. (put about 1 tablespoon in each muffin cup) Top with about 1/4 cup of any "fillings" you want. -Cheeseburger, Pizza, BLT, Chicken and Veggies, etc.... Cook meat before adding to muffin tin.
muffin pan potato gratins! So many things can be transformed by the muffin tin. I like to make my stuffin in muffin tins; it is easy to count the WW points of your serving and each stuffin muffin has crunchy edges!
Marinate thick sliced tomatoes with balsamic vinegar for 1 hour. Bake at 350 for about 7 min. Saute spinach and garlic with a dash of salt and lemon juice. Put spinach on top of tomatoes and sprinkle with low fat cheese of your choice. Broil till cheese is golden!
The BEST cornbread casserole...1 box Jiffy corn bread, 1 can kernel corn & 1 can cream corn (both drained), 8 oz sour cream, 2 eggs & 1 stick butter. Mix melted butter with eggs and sour cream, add corn and then mix in corn bread mix. Bake in greased pan at 450 for 40 minutes
