Chicken Thighs with Shallots in Red Wine Vinegar. THIS IS DELICIOUS. I left out the wine (had none) and substituted green onions for shallots, because it was all I had. Served with couscous and frozen veggies because again - that's all I had.
These were great! Restaurant quality, and super fresh. I used red, green and yellow peppers, put them in the low carb Mission wheat tortillas, and topped with low fat Mexican shredded cheese. I also used a couple fresh limes to add more of a citrusy flavor. I will definitely make these again! (Chicken Fajitas 5pp)
