Vegan meatballs: if you're a newly converted vegan missing those little balls of joy, or you are a life-long vegan that has always wanted to experience the joy of having ItalianTesties in your mouth, this recipe is sure to please all. Makes enough to serve 4 normal people, or 30 vegans. What you need:1 tablespoon extra-virgin olive oil 1 cup chopped yellow onion 4 cloves garlic, finely chopped 1 cup roughly chopped cremini mushrooms 1 cup packed baby spinach 1/2 cup sunflower seeds 1 cup cooked or canned black beans, rinsed, drained and divided 2 teaspoons dried Organic Basil 2 teaspoons dried Organic Oregano 1 cup frozen Organic Brown Rice, thawed 8 ounces Organic or Wheat Spaghetti 1 (25 ounce) jar Organic Pasta Sauce How you make it:In a large skillet, heat oil over medium heat. Add onion and garlic and cook until tender, about 5 minutes. Stir in mushrooms and spinach. Cover and cook until mushrooms are tender and spinach wilts, about 5 minutes. Meanwhile, in the bowl of a food processor, pulse sunflower seeds until coarsely ground. Add cooked vegetable mixture, half the beans, basil and oregano. Pulse until mixture is just coming together. In a large bowl, combine puréed mixture, remaining beans and rice. Stir until combined. Preheat oven to 350°F. Form mixture into 1 1/2-inch balls and transfer to a lightly oiled baking sheet. Bake meatballs 30 minutes or until heated through and crisp on the outside. Meanwhile, cook spaghetti according to package directions. Drain well and return to pot. Add pasta sauce and toss until combined and heated through. Add meatballs and toss very gently to combine, taking care not to break up meatballs. Serve.

The Ultimate Energy Bar Formula Written by Matt Frazier Three different bars made using the formula. Do they look like they have beans in them? Recipes are great. But formulas are where it’s at. Recipes allow even brand new cooks to produce something that’s really good, or at least something that doesn’t entirely suck. You can take a recipe that an expert chef created and reproduce in your home exactly the same dish, without the years of training. Score. The problem with recipes, though, is that it’s easy to rely on them too much, especially if you’re like me and you’re scared to mess with them. Eventually you find yourself stuck in a box, where you eat the same thing over and over and never venture beyond the safe comfort of your trusty recipes. This was my problem with smoothies for a long time: I’d find a recipe for one I liked, make it every day for a month, and then get so sick of it that one day I’d simply revolt. Skip the smoothie.
