Moroccan Lamb Stew | 31 Delicious Things To Cook In January
This is really, really good. I used two cans of chickpeas instead of one, and a whole can of low fat coconut milk (only about 1/3 of a cup extra). I did use quite a bit more chiles- a teaspoon of chipotle, aleppo, smoked paprika and sweet paprika and about 2 of ancho. I also used Bittman's raita recipe instead.
Kefta is ground beef or lamb, typically mixed with cumin, paprika, minced onion, coriander and parsley. Kefta makes a superb kebab (brochette), and is also the foundation of a number of other Moroccan dishes.
