In the creek by our house in Hayward, California we had watercress growing in clumps. We would pick and clean it and pat it dry then put it on a cookie sheet (with sides) and pour a lot of honey all over it. Baked a couple of hours on low it would bring out all the juice from the cress and by the time you smash the greens to get the juice out, there should be enough for a nice bit in a glass bottle. Put in fridge!
