Beetballs! Great concept for making vegan veggie burgers/meatballs w/ real ingredients! (no gluten or soy)
yogurt sauce: 1/2 c. non-dairy plain yogurt (I used coconut milk yogurt) juice of 1 lemon 1 garlice clove, minced 1/2 tsp dried dill (or 1 tsp fresh dill) 1/2 cucumber, diced 1/2 tsp sugar (optional) Mix together in a small bowl. Top onto pita chips (recipe above) with falafel, chopped tomatoes, diced onions, and cucumber.
