Produce

1/2 cup Blueberries, fresh

Refrigerated

3 Eggs

Condiments

1 cup Almond butter
1/2 cup Honey, Raw

Baking & Spices

1 cup Almond meal/almond flour
1/2 tsp Baking powder
1/2 tsp Baking soda
1 pinch Cinnamon
1/4 tsp Sea salt

Oils & Vinegars

1/3 cup Gold label virgin coconut oil

Nuts & Seeds

1/3 cup Unsweetended shredded coconut

    I used butter because I was low on coconut oil and made my own almond butter and almond flour. They were good I needed to let the flour get more fine and the honey taste was a little much.

    Paleo blueberry muffins: 3 eggs, whisked ½ c. Raw Honey ⅓ c. Unsweetended Shredded Coconut ⅓ c. Coconut Oil, melted ½ tsp. baking soda ½ tsp. baking powder ¼ tsp. sea salt pinch of cinnamon ½ c. fresh blueberries Preheat oven to 350 degrees. Mix all ingredients together in a bowl. Place ingredients into 8-10 muffin liners in muffin tin. Bake for 15-20 minutes.

Real Food Muffins: Make them what you want: blueberry, strawberry, jelly, etc. -Definitely not ones I would make for Joshua. The kids will EAT these up though! With blueberries or strawberries, they are GONE.
