      “Baked zucchini 'fries' ------------ 1. Preheat oven to 220C, cut zucchini into 8-cm lengths, cut each piece into 9 fries, place in colander, salt, let drain for at least 1h 2. Beat eggs in shallow bowl, mix almonds, Parmesan cheese, Italian seasoning in shallow bowl. Rinse zucchini, pat dry 3. Dip each piece into beaten egg, roll in coating, bake in preheated oven until tender and coating is crisp and browned, about 25 minutes, turning them halfway through cooking time.
