    Crockpot Salsa Chicken MAY 12, 2011 Holy moly, it’s been so long since I blogged here!  I’ve been so busy lately and I haven’t really been trying new recipes to share with you.  I do have a few now though, so I apologize if you keep coming here and seeing nothing new. Today’s new recipe: salsa chicken.  A moist and creamy shredded chicken recipe that’s super simple.  Just drop a few ingredients into the crockpot and poof, you’ve got a great mixture to put on top of just about anything. We ate our salsa chicken on top of some brown rice, but you could easily top baked potatoes instead.  I also think it would be great to make shredded chicken nachos with any leftovers you have. Salsa Chicken from Chef Mommy Ingredients: 1 pound boneless, skinless chicken breasts 1 can cream of chicken soup 1 cup salsa 1 package taco seasoning 1 cup sour cream Directions: 1.  Mix soup, salsa and taco seasoning in the bottom of your crockpot.  Sink chicken breasts into the mixture, covering completely.  Cook on low for 5 – 6 hours depending on size of chicken breasts. 2.  Remove chicken, shred and return to the crockpot.  Add sour cream and mix well.  Heat until everything is warmed through.  Enjoy!     Crockpot Salsa Chicken: cream of chicken, salsa, sour cream, taco seasoning (Used 2 big frozen pieces of chicken breast halves...left for 6.5 hours, but stayed on warm for 1 hour until I got home, & then added sour cream).

Going to try this but modified. I don't have Herbs De Provence so I'm not sure what I will rub it with. I don't have red peppers so I'll layer the bottom with onion and carrots and stuff the bird with apples, carrots and onion. We'll see how it tastes.

Easy & Delicious. The chicken literally fell off the bone when I lifted it out of the crock pot to put on a serving platter. (PS-I threw some carrots in too, they were amazing, the kids even ate them)

Pizza In a Crock Pot. We had this tonight and it was delish. I used an entire box of pasta rather than just 3 cups. Also used a cup less of cheese and there was still plenty on there. It was good!

1 lb chicken breasts 1 packet Italian dressing mix 2 Tbsp butter 1/4 cup lemon juice 1/4 cup chicken stock egg noodles or rice Place chicken breasts, Italian dressing mix, butter, lemon juice & chicken broth in the crockpot. Cook on low for 6-8 hours. When finished cooking, shred chicken with 2 forks. Serve chicken over egg noodles or rice and top with juices from crockpot.

Whole Chicken in a Crock Pot -- Tried and Loved. I make this all the time and then use the bones to make brother.

5-Star*****Carnitas..this smells unbelievable in the CROCKPOT. It is So delicious..read directions carefully-uses a 4-5lb. pork shoulder or butt, but once you shred it and remove most of the fat, it's enough for a meal with leftovers, even better the next day! My daughter asks for this...and brings friends!
