Memphis cole slaw - 1/2 head of cabbage, sliced (or 1 16-oz. bag shredded cabbage with carrots) 1/2 minced green bell pepper 1 to 2 carrots, peeled and grated 1/2 + cup mayonnaise 2 Tablespoons Dijon mustard 2 Tablespoons apple cider vinegar 2 Tablespoons sugar 2 + Tablespoon grated onion 2 teaspoons celery seed Salt and pepper

Dressing for KFC style cole slaw: 1/2 cup light mayonaise, 1/3 cup sugar, 1/4 cup milk 1/4 cup low fat buttermilk, 2 1/2 Tbsp fresh lemon juice, 1 1/2 Tbsp white vinegar, 1/2 tsp salt, 1/8 tsp pepper. Makes enough dressing for 8 to 10 servings of slaw: 1.5 heads cabbage, 3 shredded carrots, 2 Tbsp minced onion. Refrigerate at least 4 hours and serve with a slotted spoon.
