Windows instead of backsplash... lets in light without taking up cabinet space! Wow, cool idea! Make them the reflective glass on the outside so you aren't in a fishbowl at night.... Or before coffee :)

If I have room, I would love to do this wine rack. It would also work as a wonderful little shelving area for other little decorations. If not, I'll put something just like this above my window over my sink :)
