Along with a few sprigs of rosemary and thin lemon slices, this asparagus is tossed in olive oil, and sprinkled with salt and pepper, then roasted on parchment lined baking sheet until preferred doneness. Asparagus Gruyere Tart -- made this & tweaked it a bit, spread cream cheese on pizza dough, then topped with chopped green onions, tossed asparagus & sliced fresh mushrooms in olive oil, salt & peppered, topped with shredded gruyere cheese and baked. YUMMY!
chickpea curry - I changed this a lot, but you've got to give them credit for using chickpeas, which I loved. Okay, this will be gross if you use coconut yogurt. Use coconut milk instead. I also added a can of tomatoes, a small can of tomato sauce and 3tbsp sugar. THEN it was delicious! You could also do coconut milk with pureed mango for a delicious curry as well.
