Baked Zucchini Fries - these were good but definitely use italian Panko breadcrumbs or they will be bland. I baked mine for 12 minutes each side but the zucchini still wasn't very crispy. Maybe i am mistaken on how crispy they are supposed to get? (Sw)
Zucchini Cakes - These zucchini cakes make an elegant appetizer fit for those upcoming Oscar parties. Shredded fresh zucchini, is mixed with a little Parmesan, panko, paprika, garlic and a hint of ground nutmeg. The mixture is then pressed into patties and pan fried in olive oil until they are golden brown.
Zucchini Tots. They were called zucchini bites, but I like "zucchini tots'' better. They are the healthy version of tater tots. The recipe for these couldn't be any easier.
