Raw Zucchini Squash Sandwiches with Sprouted Hummus! This dish makes a great lunch or dinner, and you can really customize it to whatever veggies you have on hand. The squash is FROM MY GARDEN (and huge), and for the filling I used Homemade Sprouted Chickpea Hummus, sugar snap peas, tomato slices, and fresh basil with a lil’ sea salt and ground pepper for seasoning. It was incredibly satisfying and nutritious!
EGG & CUCUMBER SANDWICH: 3 hard boiled eggs • 2 Tsp mayo • salt & pepper • 2-3 Tsp chopped chives • black sesame seeds (optional) • handful of arugula or mâche drizzled w/extra virgin olive oil + Cucumber in sweet and sour marinade: • 1 medium cucumber • juice of 1 lime • zest of 1/2 lime • 2 Tsp rice vinegar • 1 1/2 Tsp brown sugar
Green goddess tea sandwiches: In a bowl stir together softened cream cheese with about 1/4 cup of fresh chives black pepper & a bit of lemon zest Thinly sliced cucumbers, carrots (shaved with a vegetable peeler) & spinach Cream cheese chive spread spread on one side of crustless white bread Fresh basil mixed with butter slathered on the other side of crustless white bread
I made these for a Baby Shower. Cucumber Tea Sandwich with Radish and Watercress. I used the first 8 ingredients except for the watercress. I could not find watercress. Then I used an english cucumber thinly sliced. The different kinds of bread are good for these little finger sandwiches. Enjoy
