Black Beans and Rice: olive oil, garlic, cooked rice, black beans, chicken or veg broth, cumin, cayenne. Follow recipe but add xtra garlic, broth & tumeric to taste. Also good w/ added corn, a splash of lime and/or a can of tomatoes & chilies.RM
Satisfying and tasty. I followed these modifications: 1 cup of lentils, 2.5 cups of water, only 1 onion, add the cumin to the onions (plus more later), plus a grated carrot, fresh spinach instead of frozen, plus some cherry tomatoes and lemon juice as a garnish.
