This is seriously the best way to eat corn.Piping hot corn on the cob is smeared with mayonnaise and dredged with Queso or Cotija cheese, fresh cilantro, chile powder, lime and plenty of salt and pepper.

SRIRACHA-SPIKED STREET CORN 4 ears of corn, shucked and split in half to form 8 pieces extra-virgin olive oil garlic salt cup mayonnaise (I prefer classic Hellmanns) 1 tablespoon sriracha sauce a bunch of cilantro, roughly chopped a couple tablespoons
