Quinoa with fresh corn and scallions in a lemon butter sauce: This is delicious. Another perfect summer side dish. I didn't have fresh corn because it isn't in season so I used frozen and it was good too. This is super quick and easy - really nice fresh summer flavor to go with any main dish. I will definitely be using this recipe this summer, especially when corn is in season!
