Tomato Basil Quinoa Salad: 2 c. prepared quinoa 1 can navy beans, drained and rinsed 3 1/2 c. – 4c. diced tomatoes 2 c. spinach 1 c. packed basil Dressing: 2 TB. balsamic vinegar, 1 TB. olive oil, 2-3 cloves garlic finely diced, zest of one small lemon, salt and pepper to taste, (parmesan cheese:optional)
fresh tomatoes handful fresh basil leaves ½ t salt ¼ clove garlic juice of ½ lemon a few tablespoons olive oil pepper to taste To make the dressing, combine the basil, salt and garlic in a pestle and mortar and pound until you have a relatively smooth paste. Add the lemon juice and olive oil.

Quinoa Vegetable Salad with Lemon-Basil Dressing. Great lunch idea. I think I would do black beans or chicken instead of garbonzo beans, not a big fan of those.
