Yum. Takes about days to completely make from scratch. Used cold brew to make less bitter and more sweet, consider adding mocha crumbles/hot brew coffee next time to cut the sweetness. Most of time spent waiting for things to chill/brew.
Banana pudding cupcakes--prepare one box yellow cake mix & substitute the 3 eggs for 2 bananas plus 2 teaspoons baking powder and bake as directed. filling is one small box banana pudding plus 2 cups cold milk. poke holes in top of cupcake and add about 1 tablespoon to hole. topping is 1 cup cold milk plus one small box banana pudding with 8oz of cool whip folded in. top with cookie and crumbles. :o)
