I am not a vegetable lover. That said, I do like to eat healthy and I know eating lots of veggies is a part of that. When I discovered roasting them I was amazed at how it changed the taste from simply being steamed or sauteed. Roasting Green Beans imparts a yummy slightly sweet and smokey taste that makes them pretty amazing.
Roasted Herb Veggies ~ Red Potatoes, Yellow Bell Pepper, Green Beans, Zucchini, Carrots, and Onion. Toss with Olive Oil, Fresh Thyme, Lemon Juice, Salt & Pepper, and Garlic. Roast at 450°F for 35-45 mins.
The "perfect" baked potato. Conventional or Regular Oven: (about 5 ounces or 150 grams each) Wash. Puncture with fork. Rub with oil. Sprinkle with salt. Directly on rack. 45 minutes at 400 degrees F. 60 minutes at 350 degrees F. 90 minutes at 325 degrees F.

Baked Asparagus with Lemon, Butter and Parmesan. lay on baking sheet, squeeze lemon over, drizzle olive oil, sprinkle Parmesan cheese, slices of lemon and salt to taste. 400 degrees for 12 mins. delish !
