The Ultimate Stuffed Zucchini

Serves 6-8


5 large cloves Garlic
3 Red potatoes (about 1 pound), medium
3 Tomatoes (about 1 1/4 pounds), medium
1 Yellow or red onion, medium fine
4 Zucchini, medium

Oils & Vinegars

4 tbsp Olive oil


6 oz Monterey jack cheese


1/3 cup Shredded fresh basil leaves or 1 tablespoon dried

Zucchini Chips These are good--and I've done them with squash too! I slice them thin, dip in egg/milk mixture then roll in original flavored bread crumbs with panko. Salt, pepper, paprika and spray the top with olive oil cooking spray. Bake at 350 until brown and crisp. We like them dipped in Ranch dressing, but tonight I'm going to mix up some "fake" Cane's sauce!
