I made this on the third of June and it was amazing. I didn't have all the ingredients nor did I put cilantro (coriander) in because I hate the flavour with a passion. It was fantastic. Next time a little bit less garlic (and I LOVE garlic)

3 zucchini Half of onion chopped 3 tomatoes Sauce- handful of chile arbol, tomatillos, clove garlic Cook zucchini and onion first, add tomatoes and sauce at end. Cook more add mozzerella cheese to top. Serve with tortillas.
