      Crunchy Coconut Chicken Tenders - kid friendly meal<--These were good! A little messy, but quick. I used chicken breast tenderloins and Mae Ploy sweet chili dipping sauce. Next time I will reduce the amount of salt and pepper.

      Crunchy Coconut Chicken- I actually can't imagine making breaded chicken without coconut now, this was so amazing. I used panko bread crumbs instead of corn flakes. The ginger is actually the kicker--I put mine in the egg mixture instead of the breaded mixture. I might cut the recipe in half next time as I'm worried some of this will go to waste before I can eat it. Definitely snack wrap material, or delicious to throw on some salad. I just mixed honey and Dijon mustard together for the sauce.

      Crunchy Coconut Chicken 1 chicken breast, cut into 2″ bites 2 cups corn flakes, crushed 1/2 cup flaked coconut 1/2 tsp ground ginger 1/2 tsp salt 1/4 tsp pepper 1 egg 1 tblsp milk Preheat oven to 375 degrees. Spray a baking sheet with cooking spray. In a shallow bowl mix corn flakes, coconut, ginger, salt, and pepper. In another shallow bowl beat egg and milk. Dip the chicken into the egg mixture then into the corn flake mixture. Press to ensure the corn flakes stick. Place on a baking sheet and bake for 12-14 minutes. Serve with a honey mustard dipping sauce.
