Mexican Baked Eggs with Black Beans, Tomatoes, Green Chiles, and Cilantro
This Mexican Baked Egg recipe is super yummy, high in protein and fiber, and easy. Save time by cooking it all in an oven safe skillet. I also used a can of mild Rotel instead of the can of tomatoes and can of green chilies. I loved this one!
Southern Living Succotash - fresh corn, lima beans or edamame and cherry tomatoes. Might use more dill and chives without thyme since it can overpower other flavors. I used less bacon grease and butter and it was still yummy! Will add creole seasoning next time too! June 2015
