Paleo Pumpkin Bread. I had some leftover pumpkin, so I gave this a try. It made two mini loaves. Turned out tasty... a little dense though. I was hoping it would rise a little more. May need to adjust the baking soda (and possibly add some baking powder too). Altitude does crazy things to baked goods.
Beanless chili 3 quarts (2.8 liters) good quality canned tomatoes; 5 lbs ground beef; 1 tbsp extra-virgin olive oil; 6 cloves garlic, minced; 1 onion, finely chopped; 5 celery stalks, chopped; 5 carrots, chopped; 4 cups button mushrooms, chopped; 3 bay leaves; 3 thyme sprigs; 2 tbsp fresh parsley, chopped; Sea salt and freshly ground black pepper to taste;
Hungarian Goulash- I toss the cubed meat in some flour before sauteeing it to help thicken it a little bit. Use 1 tsp. of salt, add more later if needed. This would work as a great crock pot meal too, save the time of satueeing everything and just dump and go.
From Mark Sisson's blog, Primal Jambalaya! Just made it tonight. It came out very nice though a little too moist for me. I will try adding less chicken stock or simmering longer before adding cauliflower rice next time.
Primal Crackers. I finally found something that will still satisfy my carb craving. I made these savory crackers with almond flour (not blanched) and a flax egg in place of the egg; the combination lent them a wonderful nutty flavor that made me feel like I was having a treat. It only took me 20 minutes to mix, roll and then bake these in my toaster oven. I think I'll be making these quite often!
Low carb pancakes: 1 C almond meal, 3 eggs, 1/8 tsp vanilla, 1/8 tsp cinnamon. Mix and pour into buttered or greased skillet. Cook, flip, cook. Done. :) Keep them on the small side if having trouble sticking together. Voila!
