    Mini Ham and Cheese Quinoa Cups 2 c cooked quinoa (3/4 c uncooked) 2 eggs 2 egg whites 1 c zucchini, shredded 1 c shredded sharp cheddar cheese 1/2 c diced ham 1/4 c parsley, chopped 2 T parmesan cheese 2 green onions, sliced salt & pepper 350F Mix all ingredients. Spray 24 cups of mini muffin tin with non-stick spray, spoon mixture to the top of each cup. Bake 15 - 20 minutes until the edges of the cups are golden brown. Let cool for 5 minutes before removing from pan. Can freeze.
