Roast Chicken: About 1 hr. at 450 (covered in tin foil after 40 min), then 15 min 400 and 15 min at 375 for a 5 lb whole chicken.Squeezed some lemon juice and choppped some garlic + garlic powder in rub.Meat is absolutely moist and delicious with a lovely herbal scent. This turned out so delicious!! I used almond milk instead of half and half. I also made a homemade spelt pie crust. I didn't measure when I chopped stuff, but with three large chicken breasts it made enough for two very full pies. I will repeat (when I have time).
Pioneer Woman Potato Soup. Another pinner says: made this earlier in the week and it was perfect for a cold day. I served it with cornbread on the side and it was delish. I omitted the parsley and it was fine. Highly recommend this recipe! I will make this potato soup from now on instead of my old boring recipe. Don't skimp on the cajun seasoning! The heat is delicious.
Bruschetta Chicken 1/2 cup flour 2 eggs, beaten 4 boneless, skinless chicken breasts 1/4 cup grated parmesan cheese 1/4 cup crushed garlic croutons 1 tablespoon butter, melted 2 large tomatoes 3 tablespoons minced fresh basil 2 garlic cloves, minced (appox. 1 teaspoon) 1 tablespoon olive oil salt & pepper to taste (see link for instructions)
